Recipe: Una Don

A classic Japanese dish, Una Don consists of steamed rice topped with grilled eel fillet that are glazed with a sweetened soy-based sauce and caramelized over heat. The grilled eel is known as Unagi, and is one of the most popular and luxurious fish in Japan.

The satisfaction of eating perfectly grilled Unagi on top of a bowl of warm rice is completely different and cannot be compared with any other experiences.

Preparation Method:

  1. Preheat oven to 218C. Cut unagi fillet into 4 pieces and place them on a baking sheet lined with aluminum foil. On the surface of the unagi, sprinkle sake and bake in the oven for 6 to 8 minutes until heated.
  2. In a sauce pan, mix all ingredients of the sauce and bring it to a boil. Simmer for about 10 minutes until slightly thickened.
  3. Place steamed rice in an individual bowl, sprinkle about a tbsp of sauce over the rice, and place cooked unagi on top. Pour some sauce on top of the fish. Sprinkle on Sansyo Japanese pepper on top. Serve immediately.
