Recipe Kimchi Jjigae

This recipe for Kimchi Jjigae (김치찌개), or better known as Kimchi stew or Kimchi soup, is a delicious Korean stew you can’t forget about when talking about classic Korean cuisine. Kimchi Jjigae is such a staple in Korean cuisines; most Korean households have this stew once or twice a week (if not more)!

Best served with a bowl of steamed rice, this simple yet fulfilling dish is enough to satisfy your stomach no matter the occasion. I mean, who doesn’t love a bowl of flavourful soup to warm you up during a cold night in? And just by following the simple steps below, you’ll be able to make your own serving of Kimichi Jjigae, too!

  1. Place the pork belly in a bowl along with the rice wine and black pepper. Mix thoroughly and leave it to marinate for about 15 minutes.
  2. In a pan, cook the kimchi until they soften.
  3. In a separate bowl, combine all the ingredients for the Jjigae base. Mix well.
  4. Next, place the marinated pork in the bottom of a pot and add all the other ingredients on top (including the Jjigae base, except the green onions).
  5. Boil the pot of ingredients over high heat. Once it starts boiling, reduce the heat to medium and allow it to simmer.
  6. Allow it to simmer until the marinated pork is cooked (about 10-15 minutes). Make sure the sauce is mixed well with the soup by gently stirring the mixture with a teaspoon every now and again.
  7. Once done, add the green onions and remove the pot from heat. Serve your bowl of Kimchi Jjigae alongside a warm bowl of steamed rice. Enjoy!
