Recipe: Kitsune Soba

Today our recipe will be for a bowl of Kitsune Soba. Kitsune Soba is a delicious meatless Japanese dish that consist of thick buckwheat noodles topped with chewy pieces of aburaage (deep fried tofu slices). The name “kitsune” means fox in Japanese, deriving from the ancient belief that these wild creatures delight in eating the deep-fried aburaage.

Served in a flavourful broth consisting of mirin, soy sauce, and dashi stock, the noodles are often accompanied by rice cakes, diced tofu, various vegetables, and sliced green onions. The combination is a match made in heaven, which is probably why Kitsune Udon is so popular in Japan.

Preparation Method:

  1. Firstly, add all the broth ingredients to a small pot and bring to a boil. Turn off the heat and place a lid on the broth while preparing the rest of the meal, allowing all the gingery goodness to infuse into the broth.
  2. Next, place a pot of lightly salted water on to boil.
  3. Meanwhile, heat a cast iron or non-stick pan with oil, just enough to cover the bottom of the pan. Then, fry the tofu slices for several minutes on both sides until golden brown and crispy. Drain on a paper towel.
  4. Once the water is boiling, add noodles and cook to package directions.
  5. Drain the noodles and rinse with cold water. Place the noodles in bowls and pour the hot broth over them, straining out the ginger pieces. Finally, top with the fried tofu, sliced, as well as your vegetables and greens. Enjoy!
