Recipe Nasi Kerabu

Nasi Kerabu is a Malay herb rice dish that’s both visually appealing and delicious at the same time. Although its blue coloured rice can be a little daunting to those who have never tried the dish, don’t let it scare you! The rice is coloured naturally (using bunga telang to do so), so you don’t have to worry about artificial colouring or anything of that sort. The recipe for nasi kerabu is actually quite simple. This Kelantan dish is usually made with a variety of herbs, fresh vegetables, condiments, fish, and meats. Another special feature of this dish is that no two Nasi Kerabu serving is the same. The fish and meats used in this dish can be easily substituted with whatever else is available, so feel free to cook something that is better suited to your tastes.  Without further ado, here is a recipe on Nasi Kerabu.

    1. Boil the salted egg in a pot of water over medium heat for about 15 minutes. Remove from heat and leave to cool. Once cool enough to handle, cut the salted egg in half and scoop both halves out of the shell.
    2. Microwave the fish crackers for 1 minute. Set both the fish crackers and salted egg aside.
    1. Wash and drain the rice 4 to 5 times. Once done, add lemongrass and kaffir lime leaves into the rice cooker.
    2. Soak the bunga telang (blue/butterfly pea flower) in warm water for about 15 minutes. Strain the blue water over the rice when done.
    3. Cook the rice.
    1. Toast (without oil) the grated coconut in a pan over low heat while stirring constantly. Cook for 8 to 10 minutes, or until the general distribution of the coconut is golden brown. Set aside once done.
    2. Now, cook the snapper fillet in the same pan for about 10 minutes. Add ¼ teaspoon of salt and pepper as seasoning, and use your spatula to break the fish into smaller pieces.
    3. Next, ground the toasted coconut using a mortar and pestle. Toss in the fish flakes and the remaining salt and pound until fine and everything is mixed thoroughly.
    1. Combine the red chillies, ginger, garlic, shallots, and lemongrass with water into a paste via blending.
    2. In a small pan, heat the vegetable oil and stir-fry the paste for 3 to 4 minutes, or until fragrant.
    3. Pour in the coconut milk and add the asam gelugor, fish sauce, salt, and sugar. Continue to stir-fry for another 3 to 4 minutes, or until the paste has thickened. Transfer to a small bowl and set aside.
