Recipe Kimchi Samgyeopsal

This Kimchi Samgyeopsal recipe is a popular Korean dish, where you eat samgyeopsal (grilled pork belly, lit. three-layer flesh) on, you guessed it, a barbeque grill. Because beef is so expensive to get in Korea, pork belly is one of the more popular grilled meats in the country.

Although this ‘recipe’ is less about how to cook Korean Samgyeopsal BBQ (all you really do is cook meat on a barbeque grill, after all), we’re going to teach you how to properly eat this delicious meal to get the utmost amount of flavour!

  1. On your BBQ grill, cook the samgyeopsal (pork belly) over high heat. Sprinkle a pinch of sea salt over the meat to season.
  2. Flip the pork belly occasionally to make sure both sides are fully cooked.
  3. When the samgyeopsal is cooked halfway through, pick it up with thongs, and cut into 2cm strips with a pair of scissors.
  4. Now, place the kimchi, garlic, and white mushrooms on the grill and let them cook. Note that you should only start doing this when the meat is 70% done to ensure that everything is done cooking at about the same time.
  5. Once everything is cooked thoroughly, take a leaf of lettuce in your hand and place the pork belly, kimchi, garlic and mushrooms on top. Add some ssamjang sauce and spring onions to garnish.
  6. Fold the lettuce over like a wrap and dip it into the sesame oil dipping sauce. Best served alongside a bowl of rice and some doenjang soup, enjoy!
